The consumption of snails was known and especially likeable from ancient times. The Minoans were the first to establish snails (Kochlies) as a delicious dish. Generally thought, they constituted basic gastronomic habit of the ancient Greeks. From the middle of 19th century and after they began to be consumed in many European countries and most importantly in France. Today they hold a very significant place in Mediterranean diet with a constant heavy demand. Their high nutritional value and the difficulty in finding them , includes them at the group of luxury products together with caviar, foie gras and truffle. Our target is to maintain stable quality and the (taste,smell,colour) features of snails so the consumer will be able to enjoy especially tastefull and quality products.
